16 ounce can fat free refried beans
2 ounces pepperoni, cut up (veggie versions found in supermarkets and Walmart)
28-30 ounces pizza sauce
1 teaspoon dried Italian seasoning
1/4 cup chopped onion
8 ounces shredded mozzarella cheese
1 package tortillas (your choice of size)
Toss everything into a medium saucepan together, over Medium-low heat, enough for the cheese to melt. Put a couple scoops into the center of each tortilla, roll it up, and heat in microwave, 30 seconds for one, 45 seconds for two.
Tip: throw in some fresh diced tomatoes or fresh sliced mushrooms for a fresh flair.
12 ounces cream cheese
1/2 cup grated carrot
1 cup shredded lettuce
1/2 pound lunch meat (smoked turkey, honey ham, roast beef)
10 inch tortillas
Spread cream cheese on one half of the tortilla, however much is desired. Lay down a couple slices of deli meat on the cream cheese, only on the one half of the tortilla. Spread a bit of carrot on top, and a couple pinches of lettuce. roll up, pin in place with toothpicks, slice in half, and enjoy. Serve cold.
Tip: put a tiny bit of cream cheese on the far flap of the tortilla, helps it stay in place better when rolled.
