Rice: 2 cups water to every 1 cup rice. For meduim-long grain rice, 15 minutes does the trick. For perfect rice: after 15 minutes, take the rice off, and do not open the lid, at all. Gives the best rice you’ll ever have.

Roux (ew)

For roux: Yes, it’s nasty, but sometimes you want a good gumbo, and unfortunately that’s a base for it. Equal amounts flour and cooking oil *preferably veggie* in a skillet over a meduim high heatm using a whisk, and stirring constantly. It’s done when it’s the color of a penny, and nice and thick.
